Butter is a solid, pale-yellow dairy product made by churning cow’s milk or cream to separate the fat globules from the buttermilk. It typically contains at least 80% milkfat, 16–17.5% water, and 1–1.5% milk solids. It has a rich flavour, high-energy content, and melts at 98.6, commonly used for spreading, baking, and sautéing.
Key Characteristics & Types
  • Composition: A water-in-oil emulsion comprising butterfat, water, and milk solids.
  • Color: Ranging from white to deep yellow, depending on the cow's diet (carotene content).
  • Salted vs. Unsalted: Salted butter contains added salt for preservation and flavour, while unsalted ("sweet") butter is often preferred for baking to control salt content.
  • Cultured Butter: Made from cream that has been fermented with bacterial cultures, resulting in a tangier flavour.
  • Whipped Butter: Contains added air or nitrogen to increase spreadability.
Common Uses
  • Spreading: Used at room temperature on bread and toast.
  • Cooking: Used for sautéing, frying, and making roux for sauces due to its flavour profile.
  • Baking: Adds fat and moisture, resulting in tender textures and rich flavor in pastries and cakes.
